Instructions:
Making the Dal
1) Cook the Lentils:
Wash and soak the lentils for 30 minutes.
Cook them in a pressure cooker with Jivana turmeric powder and Jivana sea salt until soft.
2) Prepare the Tempering:
Heat ghee in a pan. Add cumin seeds and let them splutter.
Add chopped onions and sauté (to fry) until golden brown.
Add ginger-garlic paste and green chillies; sauté for a minute.
Add tomatoes and cook until they are soft and the oil starts to separate.
Add Jivana red chilli powder and Jivana coriander powder. Mix well.
3) Combine and Simmer:
Add the cooked lentils to the tempering. Adjust the consistency by adding water if needed.
Let it simmer for 10-15 minutes. Garnish with fresh coriander leaves.
Making the Baati
1) Prepare the Dough:
In a mixing bowl, combine whole wheat flour, semolina (Rava), Jivana sea salt, and ghee. Mix well.
Gradually add milk and knead into a stiff dough.
2) Shape and Bake:
Divide the dough into equal portions and shape them into round balls.
Preheat the oven to 180°C (350°F). Place the baatis on a baking tray and bake for 20-25 minutes until golden brown.
3) Dip in Ghee:
Once baked, dip each baati in melted ghee for a rich flavor.
Making the Churma:
1) Prepare the Dough:
Combine whole wheat flour, semolina, and a little ghee. Mix well.
Add water and knead into a stiff dough. Make small balls and flatten them.
2) Bake and Crumble:
Bake the dough balls until they are golden brown.
Let them cool, then crush them into a coarse powder.
3) Mix with Sugar and Ghee:
In a pan, melt ghee and add the crushed baati.
Add Jivana classic sugar and cardamom powder. Mix well.
Garnish with nuts and raisins.
