1. Prepare the Coconut If using fresh coconut, grate it finely for a smoother barfi. Make sure there is not too much moisture in the coconut, as excess water can affect the consistency of the sweet.
2. Cook the CoconutHeat a heavy-bottomed pan and add the grated coconut along with the milk. Cook on a low to medium flame, stirring regularly. Allow the coconut to soften and absorb the milk without letting the mixture stick to the bottom.
3. Add Jivana Jaggery PowderOnce the coconut has softened, add Jivana Jaggery Powder and mix well. The jaggery will melt and combine with the coconut, creating a rich, aromatic mixture. Continue cooking on a low flame while stirring frequently.
4. Add Ghee and Flavourings Add ghee, cardamom powder, and chopped nuts to the mixture. Continue stirring until the mixture becomes thicker and begins to leave the sides of the pan.
Consistency is important. It should be moist enough to hold together but firm enough to set into pieces once cooled.
5. Set the Barfi Grease a flat tray or plate with a little ghee. Transfer the hot coconut mixture into it and spread evenly using the back of a spoon or spatula.
Sprinkle chopped nuts, saffron strands, or desiccated coconut on top. Gently press the toppings into the mixture so they stay in place.
6. Cool and CutAllow the coconut barfi to cool completely at room temperature. Once firm, cut it into squares, diamonds, or any shape you prefer.
