Making Gujarati Khandvi with Jivana Turmeric:

Making Khandvi Rolls

Step 1
Take one cup of gram flour in a bowl. Add the ginger-green chilli mixture into it. Mix it. Then add Jivana turmeric powder, asafoetida and salt.

Step 2
Once you’re done mixing well,add the bowl of curd in the gram flour mixture. Add water and stir the whole mixture (batter) well. Don’t let bubbles (lumps) form in the batter.

Step 3
Keep the bowl under a cooker with water beneath to avoid burning. Close the cooker and wait till 3 whistles.

Step 4
Take the batter out and mix it properly. Then take a tray and do the oiling so that the batter does not stick on it. Put the batter on it evenly. Let it cool off. Put some chopped coriander leaves and grated coconut on the spread out batter.

Step 5
Cut the Khandvi batter vertically into equal parts. Roll the khandvi strips tightly. Repeat for all the strips.

Tempering Tadka of Khandvi

Step 6
Add oil into the mini frying pan and add mustard seeds into it.
Add curry leaves, red chillies and stir it a bit.

Step 6
Then add some sesame seeds. Wait until it changes colour and sputters.
Now put the sputtering tadka over the lined up khandvi rolls.

Garnish with coriander leaves & grated coconut. Finally your tasty & mouth-melting Khandvi rolls are ready to be served! Eat them fresh with Coriander or Coconut Chutney!


Ingredients for the Khandvi batter
1 Cup of Gram flour
1 bowl of curd
3 green chilli
1 inch ginger
Salt to taste
Pinch of Asafoetida
½ tsp of Jivana turmeric
2 bowls of water
Oil for greasing
Fresh grated coconut for stuffing

1-2 chopped red chilli
½ tsp cumin seeds
½ tsp white sesame seeds
5-6 curry leaves
