Why Try Jaggery Shahi Tukda for Raksha Bandhan?

When it comes to Raksha Bandhan sweets, traditional favourites such as ladoos, kheer, pedhas and barfis often take centre stage. But if you want something out of the ordinary, there's always Shahi Tukda – a wonderful dessert that would add a star to your Rakhi celebration.

This Jaggery Shahi Tukda combines crisp bread with creamy reduced milk and the naturally rich sweetness of jaggery. It is not difficult to prepare at all, but it will surely bring an element of festive dessert in your preparation.

Using Jivana Jaggery Powder would bring a genuine taste of jaggery in your preparation and that too would be a perfect match with cardamom, saffron, and rabri.

How to Make This Raksha Bandhan Special Recipe

1. Prepare the Rabri: Add the full fat milk in a thick bottomed vessel and heat it to a slow boil. Now, lower the heat and let the milk simmer till it turns thick and creamy.

Stir in between and scrape off the cream from the sides and put it back in the milk. Add in powdered cardamom and saffron.

Once the milk has reduced, allow it to cool slightly before adding Jivana Jaggery Powder. Mix well until the jaggery blends into the rabri.

Tip: Adding jaggery after the milk has been reduced and the heat has been lowered helps maintain a smoother consistency.

2. Prepare the Jaggery Syrup: Add Jivana Jaggery Powder, water and crushed cardamom pods to a pan.

Gently heat the mixture till the jaggery powder melts and the mixture thickens a bit. Add saffron and rose water and keep aside.

The syrup shouldn't be too thick and pourable so that it coats the bread properly.

3. Toast the Bread: Remove the corners from the bread slices and make triangular pieces.

To prepare the crispy foundation, fry the bread pieces in ghee to make it crisp and golden from both sides.

This creates the crunchy base which contrasts with the soft, creamy rabri.

4. Assemble the Jaggery Shahi Tukda: Now arrange the fried bread pieces on the plate for serving.

Pour jaggery syrup on the bread so that the slices get sufficiently sweet without getting wet.

Pour the prepared rabri on top of the bread slices and garnish it with sliced almonds, pistachio and saffron.

What Makes Jivana Jaggery Powder a Great Choice?

The sweetness of an ingredient can influence the flavour of a dessert. Jivana Jaggery Powder is designed to offer consistent sweetness and a rich jaggery character that works well across everyday cooking as it goes through a systematic purification process and is prepared without any additional colours or whitening agents. All these aspects make it an ideal ingredient for Indian desserts like Shahi Tukda, kheer, ladoos and many other Indian sweets.

Tips for Making the Perfect Jaggery Shahi Tukda

  • Use moderately soft bread to retain its form well.
  • Toast the bread till it gets crispy and then add the syrup to it.
  • Do not add too much syrup to the bread as it may make it soggy.
  • Keep the rabri thick and creamy for the best texture.
  • Mix Jaggery Powder into reduced milk by turning down the heat.
  • Better prepare the rabri beforehand and set aside to serve it chilled.
  • Garnish the dessert with pistachios, almonds and saffron.
